Pecorino
(Pronounced as peh-koh-ree-noh)

Pecorino is the name given to a family of cheese from Italy. The most famous food family outside of Italy, Pecorino is usually quite hard.

This delicious cheese is made from sheep’s milk; a rarity these days since most producers have switched to cow milk. The name derives from pecora, Italian for sheep. The cheese is usually aged and sharp.

The Pecorino Romano is a mature cheese produced on the island of Sardinia. The other varieties of Pecorino are from Tuscany and Sicily. More matured cheeses are called Stagionato and have a stronger flavour. The Pecorino Romano is used quite frequently in pasta dishes for its salty and distinct flavour.

In Mumbai, one can buy Pecorino from BBC at J W Marriott, Sante at Bandra, Hypercity in Malad and Nature’s Basket in Mahalaxmi and Cuffe Parade.
