For takeout aficionados, food fantasies were once made of Maharaja Macs and pepperoni pizzas promising to arrive in 30 minutes. Sushi —that elegant roll of vinegared, sticky rice with a sliver of fish curled within — hadn't yet reached the plebian palate of Delhiites. Wasabi was more like “Whazzit?”, and seaweed was not something we considered remotely edible. Now we have rolled our tongue around nigiri (hand-formed sushis), have been tempted by prawn tempura and surrendered, with some reservations, to sashimi. And we know maki is not a swear word internationalised by a spinner but delicious sushi wrapped in algae. And the fish is flying. After Varun Modgill started Sushiya last year in Noida, Gurgaon and south Delhi have got new sushi takeout places.

Sushi King, set up by Sandeep and Deepa Bansal, in Gurgaon has a menu with unusual offerings like barbequed eel, peppered chicken, bacon with cheese and salamis. “Many think sushi is just about raw fish. We wanted to introduce its less popular variants,” says Deepa.

An assorted selection of 24 pieces costs Rs 699 at least, while a party platter of 60 pieces comes for Rs 2,499. Some rolls on the menu are surely tweaked for the Indian palate, but there are many that will give you the original sushi experience. While the Yori package, costing Rs 1,399, has 40 pieces, including four pieces of barbequed eel, two nigiris of shrimp and sweet egg, and pork and chicken salami; the vegetarian Geisha package for Rs 399 has 16 pieces, including California uramaki (rice rolled around seaweed and a filling of avocado or cucumber, or mushroom). All these come with portions of Miso soup. “We had initially planned a 90-cover Japanese restaurant but since that project was taking time, we thought of starting this takeaway service,” says Sandeep, who adds that most of the fish are flown in from Japan and that salmon is Norwegian. Only tuna comes from Kochi. Sushi seems to be on a roll here, with the Bansals ready to cater at parties and weddings. “We’d be catering lunch for a Japanese delegation in Noida and our sushi counter will be stationed at a wedding reception in Kanpur this week,” adds Sandeep.

Meanwhile, at Greater Kailash I, Sushi Express is also rolling out trays of makis and nigiris. You can browse through their online menu (sushiexpress.in) that includes even fruit sushis (with mangoes and grapes), in case you want some for dessert. Six pieces of Tekka Maki (tuna rolled in vinegared rice) come for Rs 210; while eight pieces of Ebi Tempura Maki (with fried prawn tempura) cost Rs 380. Fish Boat (Rs 750) has 20 pieces of nigiri sushis with salmon, prawn, snapper and tuna as fillings. Vegetarians can try out Aspara Maki (asparagus roll) and Shitake Roll (pickled shitake mushroom roll). Six pieces come for Rs 180. A party platter of 40 pieces costs Rs 1,299. Rahul Bhandari, a 33-year-old garment exporter who started the takeaway with friend Ravish Kapoor, says sushi is the new pepperoni. In the coming months, look out for combo meals with noodles and donburis (rice bowls).
