Chef Vicky Ratnani joins Aurus

It doesn’t come as a surprise to know that renowned celebrity photographer Dabboo Ratnani’s brother, Vicky Ratnani, is a master at his art too, the culinary sort. And the chef is the latest addition to the kitchen of Aurus, Juhu.

Vicky, who trained at the Dadar Catering College, has worked on some of the most prestigious cruise liners across the world, like Queen Elizabeth II and Queen Victoria II and has served the likes of the Queen and Hillary Clinton.

The chef is now on board of Dish Hospitality as Corporate Chef, Fine Dining, and his first assignment is Aurus where he intends to introduce world cuisine to the already popular restaurant’s menu. “I intend to add a modern, eclectic twist to the menu. The food here has always been good but I intend to emphasise on fresh produce.”

The chef’s weakness—fish is also the focus. “I’ll introduce global varieties like the red snapper. Besides, I will experiment with seasonings and do a bit of molecular cuisine as well,” he said. Yum.
